Penelitian ini bertujuan untuk mengetahui kadar alkohol yang terkandung dalam olahan gula aren hasil penambahan teratai salju. Olahan gula aren hasil penambahan teratai salju merupakan salah satu minuman yang dipercaya oleh masyarakat dapat menyembuhkan berbagai penyakit salah satunya adalah menurunkan kadar kolestrol, namun dari hasil pengamatan minuman ini menyerupai arak atau minuman beralkohol. Analisis kadar alkohol ini dilakukan dengan empat tahap yaitu tahap pengolahan gula aren dengan penambahan teratai salju, tahap kedua adalah tahap pemurnian atau destilasi, tahap ketiga adalah analisis kualitatif alkohol menggunakan uji lucas, dan tahap terakhir adalah analisis kadar menggunakan kromatografi gas pada variasi waktu penyimpanan sampel hari pertama dan hari ketiga. Hasil uji kualitatif alkohol menggunakan uji lucas menunjukan bahwa sampel positif mengandung alkohol yakni alkohol primer. Hasil analisis kromatografi gas dalam sampel pada penyimpanan hari pertama menunjukkan kadar alkohol sebesar 0,425 %, sedangkan pada penyimpanan hari ketiga sebesar 0,54 %, jadi dapat disimpulkan bahwa lama penyimpanan akan mempengaruhi kadar alkohol dalam olahan gula aren hasil penambhan teratai salju.

This research aims to determine the level of alcohol contained in the processed result of the addition of palm sugar snow lotus.Processed palm sugar snow lotus result of the addition is one drink that is trusted by society can cure diseases one of them is to lower cholesterol levels, but from observations of this drink resembling a wine or alcoholic beverages.Analysis of the alcohol content is performed by four phases: the processing of palm sugar with the addition of lotus snow, the second stage is the stage of purification or distillation, the third phase is a qualitative analysis of alcohol use test lucas, and the last stage is the analysis of the levels using gas chromatography at the time variation of sample storage the first day and the third day.Qualitative test results of alcohol use lucas test showed that the positive samples containing alcohol which is a primary alcohol.The results of gas chromatographic analysis of the sample on the first day of storage showed the alcohol content of 0.425%, while on the third day storage of 0.54%, so it can be concluded that the storage time will affect the level of alcohol in the processed result of the addition of palm sugar snow lotus.
