Abstract
This study was conducted to determine nutrient intake, average daily gain, carcass characteristics, and meat quality of Ongole Crossbred (OC) cattle provided with corn cobs as basal diet in complete feed and undegraded protein supplementation. Twelve male cattles of approximately 1.5-2.0 years old with the average liveweight of 272.67+26.84 kg were randomly devided into three groups with four replications, respectively. The first treatment was fed diets with elephant grass as basal diet and BC feed concentrate (R-1), the second treatment was pellet complete feed with corn cobs as basal diet (R-2), and the third treatment was pellet complete feed added with undegraded protein (R-3). Drinking water was provided ad libitum. At the end of experiment, three cattle per group were slaughtered to evaluate carcass percentage, meat chemical composition (water content, protein, and fat content), and meat physical quality (colour, pH, water-holding capacity, cooking loss, and meat tenderness). Statistical analysis of data obtained with Completely Randomized Design by a one-way classification and the difference between means were tested by Duncan's New Multiple Range Test (DMRT). Utilization of undegraded protein (UDP) affected significantly feed consumption and average daily gain (ADG), but did not on feed conversion ratio (FCR) and carcass percentage. The meat physical quality of pH of R-1 was lower (P<0.05) than R-2 and R-3 (5.32, 5.66, and 5.62), the colour of meat for R-1 was lower (P<0.01) than for R-2 and for R-3 (5.7, 7.2, and 7.5). The water-holding capacity was higher (P<0.05) for R-2 and R-3 than for R-1 (16.05, 25.39, and 24.92%). It could be concluded that complete feed and supplementation of undegraded protein improve feed consumption, ADG and water-holding capacity on OC cattle.
