Makanan olahan ikan tuna ialah jajanan olahan ikan yang terbuat dari campuran tepung tapioka dan daging ikan. Penelitian ini bertujuan untuk mengetahui makanan olahan ikan tuna yang beredar di Kecamatan Kota Utara Kota Gorontalo tercemar bakteri kemudian menghitung jumlah bakteri dalam makanan olahan ikan tuna yang beredar di Kecamatan Kota Utara Kota Gorontalo.
Metode yang digunakan pada penelitian ini adalah metode angka lempeng total(ALT).
Hasil penelitian menunjukan bahawa makanan olahan ikan tuna yang beredar di Kecamatan Kota Utara Kota Gorontalo tercemar bakteri, tetapi masih dalam batas yang dipersyaratkan oleh SNI dan jumlah bakteri pada makanan olahan ikan tuna yang beredar di Kecamatan Kota Utara Kota Gorontalo ada pedagang A adalah 1,5 x 105 CFU/ml, pada pedagang B adalah 1,9 x 105 CFU/ml dan pada pedagang C adalah 1,3 x 105 CFU/ ml.

Food of process fish tuna is snacks of like madel flesh ball from flour tapioca or starch the. Dough and its end result come near the flesh ball, but its composition is more dominant flour from at its fish flesh.
This research represent the research which in character wish to obtain get the data or picture directly hit the accurate problem, as a mean to know the food of process fish tuna circulating in kecamatan of city north of city Gorontalo contaminated with bacterium later then count the bacterium in food of process fish tuna circulating in Subdistrict in kecamatan of city north of city Gorontalo Result of this research is showed the merchant A is 1,5 x 105 CFU / ml, at merchant B is 1,9 x 105 CFU / ml and at merchant C is 1,3 x 105 CFU/ ml, all result from third merchant still as according to condition which have been specified by SNI that is 5 x 105.
