Abstract
ABSTRAK Kasiaradja, Yusmita. 2015. Uji Cemaran Bakteri Pada Jajanan Yang Dijual Di SDN 58 Dumbo Raya Gorontalo. Karya Tulis Ilmiacch, Program D III, jurusan Farmasi, Fakultas Ilmu-Ilmu Kesehatan dan Keolahragaan, Universitas Negeri Gorontalo. Pembimbing 1 Dewi Rahmawati Moo, S.Farm.,M.Sc.,Apt dan pembimbing 2 Nur Ain Thomas, S.Si.,M.Si.,Apt. Anak-anak memiliki sistem kekebalan tubuh yang belum sempurna sehingga sangat rentan terkena penyakit. Oleh sebab itu, asupan makanan dan minuman harus selalu diperhatikan terutama dilingkungan sekolah. Banyak Pangan Jajanan Anak Sekolah (PJAS) yang tidak memenuhi syarat karena mengandung cemaran mikroba melebihi ambang batas maksimum dan masih ditemukannya produk makanan dilingkungan sekolah yang tercemar bahan berbahaya. Tujuan dari penelitian ini adalah untuk mengetahui cemaran bakteri pada jajanan yang dijual di SDN 58 Dumbo Raya Gorontalo melebihi ambang batas yang ditetapkan SNI. Penelitian ini menggunakan jenis penelitian kuantitatif berdasarkan fakta yang diperoleh dari lapangan atau hasil eksperimen di laboratorium. Penelitian ini menggunakan metode Pour Plate dengan 3 sampel berbeda yaitu mie, es dan tempe yang diambil dari jajanan SDN 58 Dumbo Raya Gorontalo. Hasil penelitian menunjukkan sampel mie tercemar bakteri sebanyak 7,5 x 102 tetapi tidak melebihi batas maksimum yang ditetapkan oleh SNI yaitu 1 x 106 koloni/g, sampel es juga tercemar bakteri sebanyak 4,2 x 102 tetapi tidak melebihi batas maksimum yang ditetapkan oleh SNI yaitu 1 x 104 koloni/g. Sedangkan sampel tempe tercemar bakteri yaitu sebanyak 5,5 x 102 dan sudah melebihi batas maksimum yang ditetapkan oleh SNI yaitu 1 x 102 koloni/g. Children have incomplete immune system, so that they are susceptible to suffer from disease. Therefore, the food and drink consumption should always be paid attention particularly snacks sold at school. There are many schoolchildren snacks that do not meet the prerequirement because they contain microba exceeding the maximum threshold, and there are many snacks that were found containing hazardous material. This research aimed at investigating bacteria contamination in snacks sold at SDN 58 Dumbo Raya Gorontalo that exceeded the threshold determined by SNI. This research was quantitative research by having empirical approach. The research tries to formulate the truth based on facts gained from the field or experiment result at laboratorium. The research result showed that nodle sample was contaminated by bacteria as 7,5 x 102 , however it does not exceed the maximum threshold determined by SNI which is 1 x 106 colony/g. The ice sample also was contaminated by bacteria as 4,2 x 102, it does not exceed the SNI's maximu threshold which is 1 x 104 colony/g. Meanwhile, tempe sample was contaminated by bacteria as 5,5 x 102. It, however, exceeds the maximum threshold determined by SNI which is 1 x 102 colony/g.
