Abstract
ABSTRAK Rustam Pakaya "Analisis Kadar Protein Kasar Pada Kepiting Bakau (Scylla serrata) Yang Ada Di Kabupaten Pohuwato. Karya Tulis Ilmiah. Program Studi DIII Farmasi. Jurusan Farmasi. Kepiting bakau (Scylla serrata) merupakan salah satu jenis Crustacea dari famili Portunidae yang mempunyai nilai protein tinggi, dapat dimakan dan merupakan salah satu spesies yang mempunyai ukuran paling besar dalam genus Scylla. Hal ini dikarenakan kepiting bakau mengandung senyawa protein. Penelitian ini bertujuan untuk mengetahui kadar protein kasar pada kepiting bakau (Scylla serrata) dengan menggunakan metode kjeldahl. Hasil uji pendahuluan menunjukan bahwa dari metoda yang dilakukan untuk menentukan kadar protein dari suatu bahan pangan yaitu kepiting bakau, maka didapatkan kadar protein kepiting bakau sebesar 2,58% pada keadaan kepiting bakau kering Kata Kunci : Kepiting bakau (Scylla serrata), Protein Kasar, Kjeldahl ABSTRACT Rustam Pakaya, 2016 "Analysis of Crude Protein Levels In Mangrove crab (Scylla serrata) Available In Pohuwato. Mangrove crab (Scylla serrata) is one kind of crustacean of the family Portunidae which has high protein value, edible and is one of the species that has the largest size in the genus Scylla.
